If you’re looking for a FUN St. Patrick’s Day dessert recipe to take to a St. Patrick’s Day party, pack in your kids’ lunch boxes, or just plain enjoy (who doesn’t love a good Rice Krispies treat?), you’ve found it. These green Rice Krispies Treats are seriously adorable, y’all!

They’re green-dyed (of course!) Rice Krispies treats cut into whatever shape you want (I did shamrocks and hearts) dipped in melted green chocolate and sprinkled with gold sprinkles. (The St. Patrick’s Day pot o’ gold is on a Rice Krispies treat… who knew?!)

How to Make This Fun St. Patrick’s Day Dessert

Step #1:Coat a baking sheet generously with butter and set aside. This will keep your St. Patrick’s Day Rice Krispies from sticking to the baking sheet.

Step #2:In a large pot, melt butter over medium heat. Add marshmallows and stir constantly until completely melted.

Step #3:Lower heat. (It’s really important to lower the heat here! Don’t try to cheat.) Once marshmallow mixture has melted, add vanilla and fold. Add food coloring and stir until marshmallow mix is completely colored.

Step #4:Remove from heat (your marshmallows should have a stretchy, gooey consistency) and fold in rice cereal.

Step #5:Place mixture into your buttered baking sheet and spread evenly. Lay a piece of parchment across the cereal treats and use a rolling pin to create an even top (these cereal treats are thinner than most).

Step #6: Using your cookie cutters, cut out your desired shapes (and enjoy the scraps!) Place on a separate baking sheet (lined with parchment paper).

Step #7: Microwave candy melts and coconut oil in 30-second intervals until completely melted.

Step #8: Dip a portion of each cereal treat into candy melts and place on lined baking sheet. Top off with gold sprinkles.

Can you freeze Rice Krispies Treats?

Yes — for up to six weeks! Grab some wax paper and separate your Rice Krispies treats by layers in an airtight container. When you take them out of the freezer, let them thaw for 15-20 minutes before eating.

Do St. Patrick’s Day Rice Krispies Treats have to be refrigerated?

No, they do not need refrigeration. They will stay fresh at least for one to two days when stored in an airtight container. This St. Patrick’s Day dessert is no-bake and no-fridge! I’ve left them outside of the fridge for longer than two days, but you risk them starting to go stale.
