I know that sounds strange, because you probably think Australia is always hot… well, trust me when I say that Australians never really get used to the cold. We just simply have a small window in the year to rip out our favourite jacket that makes us feel slightly European, even for just a moment…. In Brisbane especially, we love to talk about the weather. We recently had the Brisbane comedy festival. It’s really just a few comedians that turn up at the Powerhouse in New farm with a few sets of laughter. THEY even joked about the weather, and more specifically how much people from Brisbane love to talk about what the weather is doing…. It’s pretty much sunny 360 days of the year. When it’s not, be prepared to complain like you’ve never complained before!
Speaking of the weather, Thailand is a great country that has magnificent weather. I’ve never actually been, but it is on the bucket list!

You might have seen this recipe before, and if you’re wondering what sort of magic I’m using… It is just an old recipe that has been re-vamped! Since I’ve become slightly better at taking photos, and ditched the yellow filled Iphone shots, I thought I’d better get some proper photos done to give this recipe the light of day it deserves.
Useful Tips
Whilst cooking off the beef, you will notice that a fair amount of water and juice will seep from the meat. I discarded the water / extra fat, but don’t worry, you’re still adding plenty of coconut milk back into the mix, along with the coconut oil and sesame seed oil. Never fear my fat loving friends!
Stir frying is a Chinese cooking technique in which ingredients are fried in a small amount of very hot oil while being stirred in a wok. The technique originated in China and in recent centuries has spread into other parts of Asia and the West. Since Australia is very close to Asia, we tend to do a lot of Asian cooking. I absolutely love it for this Beef Stir Fry.

Iron
I was listening to Fat For Fuel by Dr. Mercola today (seriously good read!), and he was talking about Iron. Iron is an important mineral because we can easily get too much of it. Yes, that’s right. Too much iron. And would you believe that too much Iron can actually be extremely bad for us?
Men are more susceptible to Iron overdosing, because we don’t menstruate. Women have less iron that men, but can still be susceptible to excess iron.
If you want to check your Iron levels, you should consult your physician. Ask for a Serum Ferritin Test. Iron overload is easily diagnosed by measuring your serum ferritin. Lab normal levels are correct and should be between 20 and 80 ng/ml; between 40 and 60 ng/ml is the sweet spot
Lauric Acid
Lauric Acid is converted by the body into what’s called Monolaurin. This is an antiviral and antibacterial substance that destroys organisms that can wreak havoc on your internal workings. Coconuts are high in Lauric acid, mainly in the form of Medium Chain Saturated Fatty Acids. These are commonly known as MCT’s by most people in the ketogenic community, and provide your body plenty of energy, whilst also protecting against infections and viruses.
MCT’s are metabolised by the Liver, and skip straight from the digestive tract. They are absorbed very quickly, which is why they can be used to cure quick hunger cravings. MCT oil can come in a liquid form, and cause disaster pants if consumed in excess. Always work from 1 teaspoon up to 1 tablespoon over the course of a week or so. Trust me, I have experienced all sorts of MCT oil pain.

Ingredients
- 500 g Beef Strips
- 1 Tbsp Coconut Oil
- 2 Tbsp Sesame Oil
- 1 Carrot
- 1/2 Red Onion
- 1 Zucchini
- 2 Garlic Cloves
- Small Handful Basil
- 1/2 Cup Coconut Milk
- 1 tsp Paprika
- 1 Beef Stock Cube
- 30 g Cashews Optional
- 5 g ginger
Instructions
Pre chop all the vegetables. Cut the zucchini into long strips, and the carrot into small diced pieces.
Add the coconut oil to the pan and heat up the oil with the ground garlic cloves and ginger. Next, add in the red onion. cook for about 3 mins.
Add the carrot to the pan, and 2 mins afterwards add the rest of the vegetables.
Remove from the frying pan and put onto a seperate plate. Add the beef strips to the pan and cook until lightly brown using the left over oil.
Add the vegetables back into the pan along with the coconut milk, stock and basil. Bring the pan down to a low simmer, add the cashews (optional) and let it cook for 5 mins.
Place into bowls and serve!
