It’s not summer yet, when it’s intolerable to eat complete meals, but we’ve already started to have breakfast for dinners. Do you have breakfast for lunch or dinner? When we leave winter and comforting foods behind, we often prepare breakfast foods for dinner like these Cheese Stuffed Peppers or Menemen, which is a very tasty egg dish with tomatoes and green peppers and have these in addition to sliced tomatoes and cucumbers, olives, various cheeses, jam or honey, which areTurkish typical breakfast foods. And a newly brewed Turkish black tea is almost a must to complement all these.

No other additions, but I do love innovations in cooking, so I added grated carrot and red bell pepper to give my fritters some color and additional flavors.

This recipe was quick to put together and easy to fry in a pan. It was delicious. I didn't have yogurt, so I used Asian Oyster Sauce.

I have been using this recipe for years. I always use goat cheese instead of feta because it's my favorite. I love it. The family loves it. It's so good with plain yogurt.

Added garlic, cumin, pul biber and black pepper. Also used 1 less egg but added a small amount of natural yoghurt. Delicious!

Good base recipe. Tasted a bit plain. I'd want to add some spices-maybe cumin and pepper? Some garlic and onion? Also found them a bit eggy. Would probably use one less egg next time.

Thanks Michelle for the feedback! Adding cumin would really be nice. The feta cheese I use is so strong, which I'm quite happy with. That's why I don't need any additional flavors, but I'm sure adding green onion and garlic will take these fritters to next level.

Could you use coconut oil to fry with instead of olive oil and still get the same product?

Hi Emily, I've never used coconut oil for frying, so I'm not sure.

FAQs

Why are my vegetable fritters falling apart? ›

👩🏻‍🍳 EXPERT TIPS

Take care not to make fritter patties too thin. Doing so will cause them to fall apart. If you're looking for fritters that are crispy throughout like a potato chip, this is not the recipe for you. My vegan vegetable fritters are crispy on the outside and tender on the inside.

Why are my zucchini fritters sticking to the pan? ›

If your zucchini fritters are falling apart, it's likely because the fritters are sticking to the skillet or the batter was too wet. Getting the zucchini dry before preparing the batter so the binding agents can hold the fritter together. If you have a non-stick frying pan, opt for that as well.

Why are my fritters tough? ›

Overmixing can cause the fritter to be gummy and tough. Only mix as much as you need to. I recommend skipping a mixer and doing this by hand to avoid overmixing. Use a cookie scoop.

Why are my courgette fritters soggy? ›

Start by prepping the zucchini.

First, shred it on the large holes of a box grater. Then, wrap it in a clean kitchen towel and squeeze out as much liquid as you can. This step helps create the fritters' light, crispy texture. If the zucchini is too moist, the fritters will be soggy.

Why do you put baking powder in fritters? ›

So we use both to get the best of both worlds; Baking soda (bi-carb) OR baking powder – just a touch, to aerate the batter every so slightly (without it, it's slightly denser); Parmesan – for a good hit of savoury flavour AND to make the fritters extra crispy! Green onion and coriander – for a hit of freshness.

Does baking soda make fritters crispy? ›

Is baking soda or powder best for frying? A pinch of baking soda can help produce crispy fried foods. It reacts with the acid in the batter to create carbon dioxide bubbles. These lead to an airy batter and a crisper, fluffier result.

How do you keep zucchini crisp when cooking? ›

Don't overcrowd the pan, which can cause the zucchini to steam instead of roast. Unless you have time to salt and drain the zucchini, wait to salt it until after they're cooked so the salt doesn't draw out the moisture in the oven—this can lead to sogginess.

What is the best oil to cook fritters in? ›

Vegetable oil — vegetable oil is ideal for frying because it has a high smoke point and won't burn while you're frying the fritters. Peanut oil is another great option.

How do you keep fritters crispy? ›

Keep the food warm in the oven.

If you're not serving fried food immediately, you'll need to keep it warm to prevent it from getting cold and losing crispiness. One way to do this is to place the fried food on a wire rack in the oven at a low temperature, around 200°F to 250°F.

What is the purpose of the egg in fritters? ›

Alternatively, don't use them at all. The eggs are there with the flour to bind the fritters together, and to make the fritters rise a little, but they're not absolutely necessary where cheese will melt and act as binding.

Why are my zucchini fritters oily? ›

I love zucchini fritters but there's quite an art to making a decent one. If the mix is too wet, they can be soggy or doughy. Too much oil and they can be greasy. Not enough oil and they won't be crispy (and who doesn't love crispy?).

How wet should fritter batter be? ›

Batter consistency is key to good fritters. If too runny, add a touch of extra flour (otherwise fritters soggy inside). If way too thick, add a touch of water. It does come down to how juicy / how well the water was removed from the zucchinis.

How can I thicken my fritter batter? ›

Adding flour to a wetter batter will give you the thick consistency you want. Add crumbled stock cubes for a flavourful kick! Add as little or as much as you like (or none at all), depending on the flavour you want.

How do you make fritters not fall apart? ›

If your zucchini fritters are falling apart, it's likely because the batter was too wet or the fritters are sticking to the skillet. Make sure you thoroughly dry your zucchini before preparing the batter so the binding agents (flour, egg, and breadcrumbs) can hold the fritters together.

How do you keep corn fritters from falling apart? ›

Not squeezing out as much moisture as possible will result in mushy fritters that fall apart. So give the zuc a good 'ol squeeze before tossing it in the batter.

How do you fix fritter batter? ›

Larger eggs have more water from the egg white, resulting in wetter batter and soggy fritters. Add flour to your wet batter! Most veggies have a high water content (which we know equals soggy fritters). Adding flour to a wetter batter will give you the thick consistency need to make the perfect batter.

What consistency should fritter batter be? ›

As batters go, fritter batter is far to the simplistic side of the spectrum: merely 1 part flour, 1/2 part milk, and 1/2 part egg, mixing up to a relatively thick consistency.
