So, you love pizza, huh? Well, these news might shock you, my friend: everybody does! Some more than others but I think it’s safe to say that millions, yours truly included, would trade an apple for a slice of pizza any time a day, right? So why not eat pizza for breakfast too? I’ve got the perfect breakfast pizza recipe!

With this easy breakfast pizza, you can enjoy a tasty, warm, crunchy breakfast in just 20-30 minutes if you use my thin pizza crust recipe. You can prepare the dough in the evening and refrigerate overnight then just roll out and add your toppings. The toppings mentioned in my breakfast pizza recipe are optional, based on what we love eating in the morning. But you can use whatever you’re craving to eat in the morning (although I have a hunch cereal and milk might look a bit odd on a pizza; but whatever strikes your fancy!).
My daughter really loves eggs and mozzarella cheese so for this time I thought I’d make an egg breakfast pizza with her favorite toppings. I took the chance to squeeze in some veggies too, in the form of mushrooms, you know, just to play with her culinary options and basically drive her crazy lol. She’s not a fan of veggies (what kid is?) but she wouldn’t turn down an breakfast pizza recipe with eggs and cheese, in spite of all the “yucky” mushrooms (her words, not mine). I am a mean, mean mother, I know! I also had to make my husband happy so there’s some ham in there too.
Breakfast pizza recipe
For our pizza I used my homemade pizza dough I just mentioned above (recipe here), passata (aka tomato puree), low fat ham (trying to kid myself this helps with following a low calorie diet lol), mushrooms that I sliced pretty rough, grated mozzarella cheese and of course, free range eggs.
I preheated the oven, spread the passata over the crust, cut ham and spread over the passata layer. The mushrooms where added over the ham and then I bake for approx. 20 minutes on the top level of my oven. Then I spread the mozzarella and added the eggs on top. I continued baking for 5 minutes because I didn’t want my eggs hard. You need to keep a little more or less time in the oven for harder or runny eggs.

Ingredients
- 1 pizza dough recipe here
- 8 tbsp passata (tomato puree)
- 2.5 oz low fat ham
- 5 oz white button mushrooms sliced
- 2 handfuls grated mozzarella cheese
- 5 medium eggs free range
Equipment

Instructions
Preheat oven at 395 F
Roll the pizza dough out as thin or thick as you prefer
Transfer to a pizza pan
Spread the passata over the crust
Cut ham as preferred and spread over the passata layer
Cut mushrooms into slices (I like big slices) and add a layer of mushrooms over the ham
Bake for approx. 20 minutes on the top level of your oven.
Remove pizza from oven and spread the grated mozzarella
Break the eggs on top.
Put back in the oven and bake for 5 minutes or more, depending on how hard you want the eggs
