‘Can I have...’ can be used in more contexts and generally implies ownership, whereas ‘Can I grab...’ is a very colloquial phrase that roughly means ‘Can I quickly get...’

For example, you could ask someone “Can I please have this book?” but “Can I please grab this book?” does not make much sense in the context of asking someone if you can keep their book.

The word ‘grab’ is usually used when getting something in a hurry, for example, “Can I quickly grab a few snacks from your fridge?” or “I cut my hand, do you mind if I grab a bandage or two?”

Of course, sometimes, they both make sense in the same context, such as a teacher asking his/her class: “Can I have/grab your attention please?”

@bakedbeans Can I grab 〜 is quite informal and would be used by younger people... also it sounds slightly American to me. They also say "Can I get 〜".
