Step by Step Instructions

CHICKEN.

First, you need cooked chicken. I usually cook up some shredded chicken in my slow cooker. Place 1 pound in the crockpot and cook on high for 4 hours, or low for 6 hours. No liquids needed, just salt and pepper.

When the chicken is done, you can shred it with two forks. Or, for perfect shredded chicken, use your mixer for about 15 seconds and it will shred up nicely.

You can also use precooked chicken, like a rotisserie chicken. Shred and put in a bowl.

FILLING.

Add your softened cream cheese, sour cream, buffalo sauce (Frank’s Red Hot Buffalo sauce is my favorite), and one cup of shredded cheddar cheese. Mix all of that together.

BAKE.

Place in a small, oven safe dish (about 1.5qt size). Sprinkle a little extra cheddar over the top (because, duh, more cheese!!!!).

Bake your Buffalo Chicken Dip in a 350 degree F oven for about 15-20 minutes, uncovered, until the cheese is golden, and mixture is bubbly! Once it’s done, drizzle a little blue cheese dressing over the top (or Ranch dressing if you prefer).

Cheesy creamy Buffalo Chicken Dip is the perfect game day snack. This easy recipe is a family classic, and you'll find yourself wishing you doubled the recipe!

Prep Time: 10 minutes minutes

Cook Time: 20 minutes minutes

Total Time: 30 minutes minutes

Servings: 8 servings

Ingredients

  • 1 pound chicken breasts cooked and shredded
  • 8 ounce cream cheese softened
  • 1 cup sour cream
  • ½ cup buffalo sauce Frank’s Red Hots is my favorite
  • 1 ½ cups shredded cheddar cheese divided
  • 2 Tablespoons blue cheese dressing or Ranch, for garnish
  • Fritos scoops, baguette slices, carrot/celery, for dipping

Instructions

  • In a large bowl, combine shredded chicken, cream cheese, sour cream, buffalo sauce, and 1 cup of the shredded cheddar cheese.

  • Mix with a large spatula until fully combined. Spread in the bottom of a 1.5 qt baking dish. Sprinkle the remaining 1/2 cup cheddar cheese over the top.

  • Bake in a 350 degree F oven, uncovered, for 15-20 minutes, until cheese is melted and bubbly.

  • Remove from oven and immediately drizzle with blue cheese or ranch dressing. Serve with baguette slices, Fritos scoops, and/or carrots and celery. ENJOY!

Notes

  • Use a rotisserie chicken for easy dinner prep!
  • A cast iron skillet is a great option to cook this dip in the oven. The cast iron keeps the dip warm and cheesy longer than a traditional baking dish.
  • Want more spice? Add a few drops of hot sauce to the recipe.
  • Make it in the microwave! Using a microwave safe dish, cover with plastic wrap and heat for several minutes.
  • Slow Cooker option! Add all the ingredients in a small crockpot and heat on low for 3 hours, or high for 1 hours. Serve warm.

FAQs

What is Buffalo chicken dip made of? ›

This Buffalo Chicken Dip recipe is an easy classic that features three different layers of flavors including chicken (use canned or rotisserie!) mixed with your favorite buffalo sauce (I always go for Frank's RedHot!), cream cheese, ranch dressing and, of course, lots of cheese!

How do you keep Buffalo chicken dip from getting greasy? ›

Buffalo Chicken Dip Tips

Use all-white meat chicken. This will cut down on the amount of grease in your dip. Use freshly shredded cheese (or a pre-shredded brand with cream cheese in the mix like Krafts Creamy Melt cheese). Serve this dip hot right out of the oven if you are adding cheese to the top.

What if Buffalo chicken dip is too thick? ›

This Buffalo chicken dip recipe should be thick enough if made according to the directions. But if you prefer an even thicker dip, feel free to add an extra ounce or two of cream cheese. Alternatively, if it's too thick, add milk—1 tablespoon at a time—until you reach a spoonable consistency.

Why is my buffalo dip soupy? ›

Dairy has a natural ability to counteract spiciness, so a dollop of sour cream or a sprinkling of cheese can help tone down the heat. How do you get Buffalo sauce to stick to chicken? ›

To get buffalo sauce to stick to wings, it's essential to toss the wings in the sauce immediately after they come out of the fryer or oven while they are still hot. The heat helps the sauce adhere to the wings, creating a flavorful and evenly coated exterior.

How do you make buffalo dip less oily? ›

If you are sure you are following my recipe when it comes to your cheese amounts, yet you still get a greasy or separated result… try a lower-fat cheese next time. Sometimes just reducing the fat content can help prevent this from happening. Use lean chicken or remove the skin!

How do you make Buffalo sauce less watery? ›

What is this? If you're dealing with a stir-fry sauce or gravy that's just a little too runny, make a cornstarch slurry with two parts water and one part starch (adding it directly to your sauce will cause it to clump), then whisk it into your hot sauce, keeping in mind your sauce will further thicken as it cools.

Are you supposed to heat up buffalo dip? ›
